Simple & Delicious Stew

This hearty stew is sure to make you feel warm and cozy even on the coldest of nights!

I have a goal this new year to get things done! Don’t be confused I’ve been getting a LOT “done” in terms of survival. haha Taking care of 2 little ladies has been the biggest and most wonderful thing of this last year. I have been getting that creative itch again and love to share things I love, and I hope could inspire others! I also love having a place for all my recipes, handouts, lessons, etc. So here’s to hoping there will be more posts ahead. And maybe there will be better pictures! haha NO promises, but right now I’m hoping to get the posts up no matter what the pictures look like and possibly update them later! A dear friend recently told me DONE is better than perfect. I’m going to take that new motto and run with it. I worry so much about things being perfect and exactly how I have pictured but I could (and have been) wait years and years till that magical time comes and I’m realizing time is passing and nothing will change unless I make it change, I don’t want to spend my life saying I’ll get to these things some day and never get to them. I have to start now. I’ll learn and grow on the way! Perfection takes time and patience!

This recipe is so simple and delicious! I love that it cooks all day long in a crockpot and is the perfect hot soup on a cold winter night. It’s a family favorite recipe, my mom has made it for years and we’ve always loved it! Pair it with some bread and a salad and dinner is ready to go!

You can prepare, wash and cut, all vegetables the night before and in the morning brown the meat, mix the gravy and place all ingredients in the crockpot. So simple! If you do decide to prep the vegetables the night before make sure to keep the potatoes covered in water so they don’t go brown.

We prefer to have the meat and vegetables cut in bite sized pieces, not too small and not too large-just right! It makes it very easy to enjoy the soup and possibly get a few different pieces in one bite.

Our favorite way to cook this dish is in a crockpot.  THIS is the crockpot I’ve had for years! We got it as a wedding gift 7 1/2 years ago and it is still working and looking just like it did when we got it. Love that the lid secures on too for easy transportation! Even though the price is a little astonishing, it’s worth it for the quality in my opinion! It’s the perfect meal simmering away on a cold winter day.  It also gives you ample amount of time to have frozen rolls rising, or time to make bread of any kind from scratch. Our favorite rolls are Frozen Rhodes White Dinner rolls. Not only are they super easy to “bake” but also SO delicious! After baking top with butter and everyone will think you made them from scratch.

Simple & Delicious Stew

This hearty stew is sure to make you feel warm and cozy, even on the coldest nights!

Ingredients

  • 1 1/2 lbs. lean stew meat cubed
  • 2 C. celery cubed
  • 2 C. carrots cubed
  • 2 C. potatoes peeled and cubed
  • 1-2 large onions cubed, use 2 if you like onions
  • 1 can tomato soup
  • 2 cans water
  • 1 pkg. brown gravy mix OR 2 bouillon cubes
  • 1 tsp. salt
  • 3 T. Minute Tapioca
  • pepper to taste

Instructions

  • Trim fat from meat and cut in smaller pieces, if needed. Cut vegetables.
  • Spray pan with non stick spray. Put meat in a bag with some flour, shake to coat. Brown meat in skillet, add a little bit of water to pan. Brown on low heat. Once browned, drain if needed then place in crockpot with cut vegetables.
  • In a separate small bowl mix together remaining ingredients for gravy and pour over vegetables and meat. Mix to coat.
  • Cook in a crockpot for 6-8 hours on low. Check potatoes to see if done before serving. If you don't want to use a crockpot this can be baked in a covered roaster or casserole dish at 250 degrees for 6-7 hours.

Notes

We prefer to cut the meat and vegetables in bite sized pieces.  You can cut them bigger if you’d like.  My dad usually cuts the onions smaller than bite sized.

If you want more sauce, my mom likes to double the gravy ingredients.  Adjust to your liking!
If you precut your vegetables make sure the potatoes stay in water to prevent browning.
