Simple & Delicious Stew
This hearty stew is sure to make you feel warm and cozy, even on the coldest nights!
- 1 1/2 lbs. lean stew meat cubed
- 2 C. celery cubed
- 2 C. carrots cubed
- 2 C. potatoes peeled and cubed
- 1-2 large onions cubed, use 2 if you like onions
- 1 can tomato soup
- 2 cans water
- 1 pkg. brown gravy mix OR 2 bouillon cubes
- 1 tsp. salt
- 3 T. Minute Tapioca
- pepper to taste
Trim fat from meat and cut in smaller pieces, if needed. Cut vegetables.
Spray pan with non stick spray. Put meat in a bag with some flour, shake to coat. Brown meat in skillet, add a little bit of water to pan. Brown on low heat. Once browned, drain if needed then place in crockpot with cut vegetables.
In a separate small bowl mix together remaining ingredients for gravy and pour over vegetables and meat. Mix to coat.
Cook in a crockpot for 6-8 hours on low. Check potatoes to see if done before serving. If you don't want to use a crockpot this can be baked in a covered roaster or casserole dish at 250 degrees for 6-7 hours.
We prefer to cut the meat and vegetables in bite sized pieces. You can cut them bigger if you'd like. My dad usually cuts the onions smaller than bite sized.
Our favorite way to cook this dish is in a crockpot. It's the perfect meal simmering away on a cold winter day. It also gives you ample amount of time to have frozen rolls rising, or to make bread of any kind from scratch.
If you want more sauce, my mom likes to double the gravy ingredients. Adjust to your liking!
If you precut your vegetables make sure the potatoes stay in water to prevent browning.
