Peanut Butter Truffles/Buckeyes

I have this adorable friend that makes the most delicious treat every December. They’re called Buckeyes! She has really perfected them, and I love to support her when she sells them every year in December. Seriously it’s MY pleasure and to my benefit! haha These buckeyes are little peanut butter balls partially dipped in chocolate to make the most delicious peanut butter chocolate treat! I really love them! Now this isn’t my friends recipe, she is still selling hers and I know it’s tricky getting recipes when you’re selling a product so I didn’t even want to ask. But this recipe is GOOD! It made me think of hers immediately! Like i’m on the right path! haha

So try this out and if you want a buckeye seller in December let me know haha I have the best one! Not even joking.

I made these for a Super Bowl party with my family and shaped just a few like mini little footballs. I did that by rolling the ball then pinching both sides and molding the peanut butter center into a football shape before putting them in the fridge. I love the little white chocolate thread details, I did that after dipping them in milk chocolate, and with a melted white chocolate in a piping bag. If the whole from the toothpick bothers you you can gently press the peanut butter center together to fill in the middle to close it. These could also be fully dipped if you’d like, and if have the time and patience!

I mixed the slightly softened (at room temp for 30 minutes on my counter) salted butter and peanut butter in my kitchen aid until it was fully incorporated and creamy before adding the powdered sugar. Then scooped them into balls using a cookie scoop and placed them on a parchment lined cookie sheet. I broke each ball in half then decided if I wanted them to be tiny or big bites, if I wanted them tinier I would break them in half again-so 1/4 of the original 1 T. scoop! These are not uniform and that was just fine for my event. Popped them in the fridge for at least 30 minutes. Then started dipping in the chocolate! You have to work quickly because the chocolate starts to thicken with the colder peanut butter mixture. I like to use a lot of tooth picks (like 5) then take them out to dip more haha Dallin thinks that silly but to each their own.

For this recipe you’ll definitely need toothpicks, a scoop (this is the one I have and love, and the set that’s on my wishlist is HERE), and a mixer either a hand held mixer or kitchen aid! I quadrupled the original recipe so this can easily be cut in half or more, but I’d still recommend a mixer to get that smooth even texture.

Peanut Butter Truffles/Buckeyes

Ingredients

  • 1 C. (227 g) salted butter room temperature
  • 2 C. (512 g) peanut butter
  • 5 1/3 C. (640 g) powdered sugar
  • chocolate for dipping I used and loved Peter's milk chocolate bar.

Instructions

  • Beat butter and peanut butter until smooth.
  • Once fully incorporated add powdered sugar.
  • Roll into balls and refrigerate 30 minutes.
  • Melt chocolate.  Remove balls from fridge. Dip individual peanut butter balls in chocolate and place on parchment paper. You can choose to fully coat the peanut butter ball in chocolate to make truffles, or place a toothpick in the center of peanut butter ball and dip in chocolate then place on parchment paper to set to make buckeyes.

Notes

-After I add in my powdered sugar and BEFORE I turn on my mixer, I always place a cotton towel around my mixer to block any powdered sugar from flying out.  It holds everything in place really well!
-What is written above is a x4 the original recipe so it can easily be cut in half or cut down to 1/4 of the recipe.  
-I used part of the large milk chocolate Peters chocolate bar for the dipping chocolate and it was the perfect dipping chocolate to pair with the peanut butter.
